Burrito Pie

This is a story about food.  Around here most food stories involve fish.  If you listen to the nightly happy hour conversations you might think ALL stories involve fish...with a dash of occasional trash talk.

Fish are weighed, measured & photographed for evidence, but you know when there is a tail spilling out of the bucket that you have a good one!

Each evening the fresh events of the swim are rehashed and there is genuine happiness throughout the anchorage for the catch of the day.

We all know each others’ fish stories mostly because we were witnesses, so we help them become refined & embellished over time to become the tall fish tales of years past.

Sure, we’ve been eating well…  celebrating birthdays and turkey days of late.  But freshly caught fish still tops the list as the healthiest and most satisfying meal of choice.

When snapper is the catch of day it is time for a sushi & sashimi night.  Dog snappers are a gold standard, but a mutton snapper is a lovely addition to the feast.

This seems to be the year of the permit, however; so we’ve found many new ways to cook and eat this tasty fish, careful not to overcook it:  permit sautéed in lemon caper butter, permit veracruz, permit curry over jasmine rice, permit tacos, permit curry salad sandwiches, permit pot pie!

When the catch dries up for whatever reason (weather, getting out-witted?), all it takes is dinner plans with friends and a massive burrito pie to result in the most productive fishing day yet.

(Kinda like when making water and doing laundry will bring on the rains in torrents!)

So there are the groupers!  YUM!
